Here you are one of the best gluten-free vegan dish ever! Thanks to my roomie Avil who showed me how to prepare the “sauce”…
Preparation time: +/- 1h
Serves: 4-6 people
½ White cabbage
300gr. Brussels sprouts
½ cup to 1 cup bouillon (or water)
Olive oil, salt, herbs…
Pasta (80-100 gr. per person)
*EXTRA TIP: sun-dried tomatoes (I used the ones that come already in oil)
- Peel & cut the onions and start cooking in a pot with some olive oil.
- On the meantime, wash and cut the courgettes and add to onions.
- Leave for a couple of minutes while stirring and pour some bouillon (and water if it is concentrated.
- Let this cook until soft and then add half of the spinach.
- Add salt, pepper and spices to taste, blend and leave apart.
- Clean and cut the cabagge and the Brussels sprouts and cook in a pan with some oil.
- Add some more bouillon, spice* to your taste and let It cook covered at low temperature. *I used Italian mix to give it some taste, it was great!
- On the meantime, get your pasta ready! (if you are using any other kind of grain that takes longer to cook, consider starting there)
- Once the veggies are soft add the sauce and let it cook together for a little while.
- Cut some dried tomatoes (if desired, they are not in the picture, hehe) and as the pasta might be ready put everything together! That means veggies (and sauce already), pasta, dried tomatoes, almond powder and the rest of the spinach.
It also goes well with some whole rice and/or adzuki beans instead of pasta ;-)
You will not believe this, but it is incredibly creamy, vegan, gluten-free and yummy! :)

Why should we wait to the end of the year to put our happy moments toghether? What about this!?!
It goes like this: everythime something good happens to you, you have a happy moment, happy thought or nice experience you write it down in a piece of paper and you leave it in the pot. As simple as that! If you do it regularly, imagine how many happy moment you will have at the end of the year! Plus, when you write something down you it remains longer, so you will feel happier longer :P

Here I am eating raw food one more time, where? In Antwerp again! It seems to be the paradise for raw eaters in Belgium, yesssss! I spent a week working in this beautiful city with not much time to cooking or whatsoever… Fortunately I did some research and I discovered “eten vol leven” a great “ORGANIC JUICEBAR – RAW FOOD KITCHEN”!
What I ate? A wrap made with love and “sur demande” (I kindly asked for no cucumber and they put some apple instead…). I don’t really remember the ingredients, but for less that 8€ I had a tasty raw organic wrap! (Very ecological too as you can see in the picture).
So, if you live in Antwerp or are just doing some tourism around, don’t miss the chance to visit this cozy establishment and enjoy a meal full of love!

Two weeks ago I had to go working to Antwerp everyday so I decided to explore de city in a culinary way! This is my first experiment: eating a Holy Smoke Burger from “Seed of life”, the first superfood store in Antwerp!
Curious? Well, it was not only me saying how good it was… My colleagues who are not used to healthy food certified its tastiness! :) Raw, vegan and gluten-free, what else can you ask for when you have a limited diet and want to eat out? Well, I have to add that although it was not cheap (14€), the ingredients were fresh, the burger was fulfilling and the owner was very very nice.
If you are ever around in Antwerpen and want to have a great raw vegan meal, this is one of the places to go! I highly recommend it, it is a great experience! (you just to look at my face to see how much I enjoyed it, hihihi)

I can’t express how happy I am today! :) For the first time since I can remember I have been swimming in the sea and a lake the last two weekends! I was always the one saying “thanks for the invite, but no… :(“. Although I would like to join to whatever outside summer activity I would always come up with a “good excuse”: “I’m allergic to the sun”, “it is too hot for me”,” I don’t feel like it”… I’ve missed all kind of cool events in the summer thanks to my “fears” and my allergy…
What has changed then? Well, my diet and my thoughts to begin with… :)
If you think you can, or you think you cannot, you are right!
Since last summer I’ve quit dairy and my intake of veggies (specially the green ones) has almost doubled, which has nearly finished with my skin problems (I have suffered from eczema and other issues during my whole life). This week, for the first time in YEARS I went outside when it was warm and the sun was shining in my shorts and t-shirt (no long trousers or long sleeve shirts)! You might not know me, but no-one had ever seen me like that in my adult life! hahaha
The best of all?I had lots of fun saying “yes” to going to the beach or the lake, playing sports under the sun in my bikini, swimming, playing at the water sledge AND getting a tanned! Of course I used a lot of sun cream, but I didn’t get burned, eczema or whatsoever! :)
Moral: eat tons of veggies instead of processed food and believe that anything is possible. Getting tanned was my Christmas wish for this year… :) Thank you Universe for guiding me towards it, It is one of the best presents EVER! :)

Not that long ago I had to change trains in Antwerp, where surprisingly for me I found a strawberry stall! :) “Lekker en Gezond” (Delicious & Healthy) was the name of the stand where other fruits could also be found :)
It’s great to see that healthy stuff is conquering public places such as Antwerp’s Central Station! :)

I can’t really believe one year has passed since we started walking El Camino… We were three young girls (Sara, Osane and Sara) who barely knew each other in person but that had shared a lot thanks to the Internet (it is crazy how the media can connect people nowadays!). We knew where we were coming from (same job that was recently over in different locations in the world: Viena, NY & Brussels) but we had no clue where we would end up in the coming future…
This is me exactly one year ago… What has changed? Can you see something different? I do… hahaha I feel like a whole new person since then… At that moment I had tons of questions in my head: how would it go among the three of us? Will it be too much walking? Am I bringing too much stuff? Will I be able to find the right food for me? Will we meet nice people along the way? How would the weather be like?… But the most important question… What will I do with my life after El Camino??
Well, I will tell you the answers to these questions next week, when El Camino was supposed to come to an end after 5 days of walking, rain, pain, good food, thoughts, sayings and happiness :)
So far I will say that sharing such an experience with this two friends was absolutely priceless… I still remember like if it was yesterday the moment when I met one of them for the first time in my life on a train and when we both met the third one at the bus station in Monforte de Lemos… It was like if I had known them from my whole life… :) The three of us so different and so much alike at the same time… We are dreamers, we cannot help it, but that’s fine because I dont think we want to do something about it but keep on dreaming BIG! :)
Thank you very much Sara and Osane for such a good vibe, so many laughs -indeed a lot ;-)- and coming with me! I still smile every time I think about our adventure… When and where will it be the next one? :p
Normally I am quite organized and I manage to bring some healthy snacks with me when I’m traveling… However, this time it was a bit of chaos, and I forgot to prepare my lunch, hihi. HELP! Everybody knows an airport is not the best place where you can eat healthy on the go…
Fortunately I knew that at Brussels airport a tasty fresh juice was waiting for me… :)
It’s name is”energetic morning” and it made my lunch! Hahaha 35cl of carrot, root beet, ginger and apple juice…. Of course that is not enough food for a proper lunch, but together with a healthy nut bar I got enough fuel to get to my next destination, home….
