Gluten free pasta with veggie cream and veggies! Yummy!

Here you are one of the best gluten-free vegan dish ever! Thanks to my roomie Avil who showed me how to prepare the “sauce”…

Preparation time: +/-  1h

Serves: 4-6 people

Ingredients

½ White cabbage

300gr. Brussels sprouts

2 Courgettes

200-300gr. Spinach

2 Onions

½ cup to 1 cup bouillon (or water)

Olive oil, salt, herbs…

Almond powder

Pasta (80-100 gr. per person)

*EXTRA TIP: sun-dried tomatoes (I used the ones that come already in oil)

Directions

Sauce

  1. Peel & cut the onions and start cooking in a pot with some olive oil.
  2. On the meantime, wash and cut the courgettes and add to onions.
  3. Leave for a couple of minutes while stirring and pour some bouillon (and water if it is concentrated.
  4. Let this cook until soft and then add half of the spinach.
  5. Add salt, pepper and spices to taste, blend and leave apart.

Veggies

  1. Clean and cut the cabagge and the Brussels sprouts and cook in a pan with some oil.
  2. Add some more bouillon, spice* to your taste and let It cook covered at low temperature. *I used Italian mix to give it some taste, it was great!
  3. On the meantime, get your pasta ready! (if you are using any other kind of grain that takes longer to cook, consider starting there)
  4. Once the veggies are soft add the sauce and let it cook together for a little while.
  5. Cut some dried tomatoes (if desired, they are not in the picture, hehe) and as the pasta might be ready put everything together! That means veggies (and sauce already), pasta, dried tomatoes, almond powder and the rest of the spinach.

It also goes well with some whole rice and/or  adzuki beans instead of pasta ;-)

You will not believe this, but it is incredibly creamy, vegan, gluten-free and yummy! :)

Eating Vegan in… Ghent! @ De Zuidkant!

Ohhh yeah baby! Las Monday the 20th november I had de honour to enjoy a very cozy evening! Every single detail was just perfect, the company, the place, the food and the music! My boss and friend Lucie asked me to go with her to this new restaurant in Ghent, De Zuidkant, to delight the concert of a friend of hers. I just could not say no!

Unfortunately I don’t have any pics from the nice food we had (btw, vegan as far as I know), but I do have the poster from the eve with artist presentation: Michael Holt. I had already heard from him at Lucie’s place, but the “house concert” was even better! This guy has a very special touch, he’s very sweet, deep and authentic as well as funny :) He managed to involve us all with his music, which was food for the soul! He tought was that we should take some time to just enjoy music while doing nothing else! Wise words, thank you Michael for the “slow music”! ;-)

Food wise, it was a closed menu, we could not choose what to eat, but who wants to choose when everything we ate was simply delicious? The restaurant has been open for less than a month now, but it is already a success! Griet & Ellen, the owners, do know how it make your meal a great experience :) They do have a special formula, they cook something different everyday and you can go with your own containers and enjoy their food at home! That’s the perfect excuse to visit them often and try their creations. I am sure I will be back very soon, you will read more about it then! ;-)

Eating Vegan in… Ghent! @ Avalon!

Two weeks ago I had a very spacial visit, my friend Olga from Budapest! After a very nice but rainy evening around Ghent we wanted to eat something… Where should we go?!?! Well, she’s fine with everything, but for me it is not that easy to find a vegan place where I can also eat gluten-free! Fortunately Avalon was still open by the time that we got hungry :) 

They do have menu but we went for the “Dagschotel” or “today’s speciality” and we got this amazing dish full of tasty veggies and quinoa, all organic! I could not say what I liked the most, it was all amazing!

I highly recommend it if you want to eat very good (and feel full afterwards) at a reasonable price, 15,60€ (for such a delicious vegan and organic dish was is not much, right?)

Happy World Vegan Day!

I didn’t know that, but apparently November is the vegan month! the fact that you are reading thins doesn’t imply that you are a vegan (neither am I 100%) or that I want you to “convert”. However, have you ever given it a chance? Do you know what it all is about? Why do people become vegans? Is it healthy? Is it tasty? … Sooooo many questions…

There is no need to be strict on it, but what we would all turn our diets into a plant-based diet? What about being conscious about it and trying to “veganize” our diet once a week? In Belgium you can already find great initiatives like “veggie donderdag”. It means that in every restaurant on Thursday there is at least one vegetarian option, isn’t it cool? I think so… Many families try to follow it also at home :) Congrats!

Eating healthy @Gitanekesfoor, lots of options!!

405586_468343946584014_1824370572_nAt the beginning of September I went working to a nice gypsy circus and music festival in Belgium, Gitanekesfoor. As always, I had planned most of my meals in advance but fortunately I had also left some room for nice surprises! :) 

The catering in the festival was much different from most festivals I’ve been to… Organic fries, vegetarian balls, gluten-free pancakes, watermelon, fresh made juices or home-made pizza among other dishes definitely upgraded the experience of all us! :)

Here you are the most vegan, gluten and sugar-free options!

This little caravan assisted by 4 lovely Dutch girls   very tasty pitas filled with fresh salad and all kind of veggie balls. Since I don’t take any gluten, they offered me a dish with falafel and salad, OMG, sooo yummy!!

Have you ever ridden a bike to get your own fruit juice? This this I don’t mean to take your bike to get to the store, hehe. Now it is possible! This creative company gives you the chance to make your own  fresh made fruit juice that you blend yourself at the same time you practice some exercise… Plus it is very ecological because they don’t need any electricity! Amazing, right? :)

I will not say much about it because it deserves a whole post for itself! This cooperative not only uses organic products from A to Z but it is also completely vegetarian with some vegan options! It is true that fried fries are not super heathy, but the whole concept involves a very conscious alternative…

At last but not least, milk and gluten-free pancakes (baked with bookweit)! Ok, true, they contain eggs (so they are not vegan), but ehh, that’s already something, right? :)  Plus their friendly staff you can put on top of your pancake whatever you like!

Eating raw food in… Antwerpen! @ Seed of Life > Holy Smoke Burger, yummmi

IMG_20130808_150319 (2)Two  weeks ago I had to go working to Antwerp everyday so I decided to explore de city in a culinary way! This is my first experiment: eating a Holy Smoke Burger from “Seed of life”, the first superfood store in Antwerp!

Curious? Well, it was not only me saying how good it was… My colleagues who are not used to healthy food certified its tastiness! :) Raw, vegan and gluten-free, what else can you ask for when you have a limited diet and want to eat out? Well, I have to add that although it was not cheap (14€), the ingredients were fresh, the burger was fulfilling and the owner was very very nice.

If you are ever around in Antwerpen and want to have a great raw vegan meal, this is one of the places to go! I highly recommend it, it is a great experience! (you just to look at my face to see how much I enjoyed it, hihihi)
