Here you are one of the best gluten-free vegan dish ever! Thanks to my roomie Avil who showed me how to prepare the “sauce”…
Preparation time: +/- 1h
Serves: 4-6 people
½ White cabbage
300gr. Brussels sprouts
½ cup to 1 cup bouillon (or water)
Olive oil, salt, herbs…
Pasta (80-100 gr. per person)
*EXTRA TIP: sun-dried tomatoes (I used the ones that come already in oil)
- Peel & cut the onions and start cooking in a pot with some olive oil.
- On the meantime, wash and cut the courgettes and add to onions.
- Leave for a couple of minutes while stirring and pour some bouillon (and water if it is concentrated.
- Let this cook until soft and then add half of the spinach.
- Add salt, pepper and spices to taste, blend and leave apart.
- Clean and cut the cabagge and the Brussels sprouts and cook in a pan with some oil.
- Add some more bouillon, spice* to your taste and let It cook covered at low temperature. *I used Italian mix to give it some taste, it was great!
- On the meantime, get your pasta ready! (if you are using any other kind of grain that takes longer to cook, consider starting there)
- Once the veggies are soft add the sauce and let it cook together for a little while.
- Cut some dried tomatoes (if desired, they are not in the picture, hehe) and as the pasta might be ready put everything together! That means veggies (and sauce already), pasta, dried tomatoes, almond powder and the rest of the spinach.
It also goes well with some whole rice and/or adzuki beans instead of pasta ;-)
You will not believe this, but it is incredibly creamy, vegan, gluten-free and yummy! :)

Nice, nice, nice! I found a nice & warm dark chocolate with almond-rice milk in Ghent! I had it this week at “Le Jardin Bohémien” with a good friend while we were working :-) Life is much better with such an amazing vegan drink! :)

Ohhh yeah baby! Las Monday the 20th november I had de honour to enjoy a very cozy evening! Every single detail was just perfect, the company, the place, the food and the music! My boss and friend Lucie asked me to go with her to this new restaurant in Ghent, De Zuidkant, to delight the concert of a friend of hers. I just could not say no!
Unfortunately I don’t have any pics from the nice food we had (btw, vegan as far as I know), but I do have the poster from the eve with artist presentation: Michael Holt. I had already heard from him at Lucie’s place, but the “house concert” was even better! This guy has a very special touch, he’s very sweet, deep and authentic as well as funny :) He managed to involve us all with his music, which was food for the soul! He tought was that we should take some time to just enjoy music while doing nothing else! Wise words, thank you Michael for the “slow music”! ;-)
Food wise, it was a closed menu, we could not choose what to eat, but who wants to choose when everything we ate was simply delicious? The restaurant has been open for less than a month now, but it is already a success! Griet & Ellen, the owners, do know how it make your meal a great experience :) They do have a special formula, they cook something different everyday and you can go with your own containers and enjoy their food at home! That’s the perfect excuse to visit them often and try their creations. I am sure I will be back very soon, you will read more about it then! ;-)

Looking for a magic dessert? Dont look any further, you have it! I know it seems like a weird combination, but actually it is just amazing! I will not make it any longer, here oyu have de recipe ;-)
Ingredients for a cup (1-2 pax):
1 Ripe Avocado
2 Table spoon cacao powder (or carob)
1 Table spoon sweetener (in this case, agave syrup)
A pinch of salt, cayenne pepper, cinnamon and/or vanilla to taste
Open the avocado and mix it all with the mixer!
What do you think? Isn’t it simple and fast? I can tell you it tastes amazing! Try it and let me know how do you like it!

Two weeks ago I had a very spacial visit, my friend Olga from Budapest! After a very nice but rainy evening around Ghent we wanted to eat something… Where should we go?!?! Well, she’s fine with everything, but for me it is not that easy to find a vegan place where I can also eat gluten-free! Fortunately Avalon was still open by the time that we got hungry :)
They do have menu but we went for the “Dagschotel” or “today’s speciality” and we got this amazing dish full of tasty veggies and quinoa, all organic! I could not say what I liked the most, it was all amazing!

I highly recommend it if you want to eat very good (and feel full afterwards) at a reasonable price, 15,60€ (for such a delicious vegan and organic dish was is not much, right?)
