I would love to share with you the recipe we followed for this delicious juice*, but I can’t… Not because I don’t want to, but because it was the outcome of the flow of the moment… Marina started playing the piano, I started juicing what we had found and agreed at home and mAgIc just happened :)
Because life is about the people you meet and the things you create with them, and when the time is right and we let ourselves go, then everything is possible! Thank YOU Marina (check her blog here) for so many unexpected lovely moments together, I don’t know if you’ve noticed, but we inspire each other and shine!

Looking for a magic dessert? Dont look any further, you have it! I know it seems like a weird combination, but actually it is just amazing! I will not make it any longer, here oyu have de recipe ;-)
Ingredients for a cup (1-2 pax):
1 Ripe Avocado
2 Table spoon cacao powder (or carob)
1 Table spoon sweetener (in this case, agave syrup)
A pinch of salt, cayenne pepper, cinnamon and/or vanilla to taste
Open the avocado and mix it all with the mixer!
What do you think? Isn’t it simple and fast? I can tell you it tastes amazing! Try it and let me know how do you like it!

Two weeks ago I had a very spacial visit, my friend Olga from Budapest! After a very nice but rainy evening around Ghent we wanted to eat something… Where should we go?!?! Well, she’s fine with everything, but for me it is not that easy to find a vegan place where I can also eat gluten-free! Fortunately Avalon was still open by the time that we got hungry :)
They do have menu but we went for the “Dagschotel” or “today’s speciality” and we got this amazing dish full of tasty veggies and quinoa, all organic! I could not say what I liked the most, it was all amazing!

I highly recommend it if you want to eat very good (and feel full afterwards) at a reasonable price, 15,60€ (for such a delicious vegan and organic dish was is not much, right?)

This almond bread is the “star” of my recipe blog in Spanish “Candirecetas“. It is a great alternative for a gluten-free version with tons of proteins and good fats!
Wanna give it a try?
Cooking time: +/-10′ preparation + 1h in the oven
Portions: 4-6 servings
difficulty: very easy
What do you need? a beater, oven platter, mixing bowls, oven
- 400gr. Almond flour
- 1 Teaspoon baking soda
- 1 Tablespoon chia
- Salt & Herbs
- 3/4 glass water
- 1 tablespoon olive oil
- 1/2 lemon juice
- Preheat the oven up to 180ºC
- Stir the chia together with the water in a big bowl and leave it for about 10min.
- Mix the almonds together with the selected herbs and salt.
- Get the oven platter ready, maybe with some oven paper or spreading some oil so that the dough doesn’t get stuck.
- Mix the lemon and the baking soda in a glass.
- Stir de chia and pour de rest of the liquid ingredients (lemon + baking soda & oil).
- Step by step add the almond flour to the liquid ingredients. It can happen that you get a thick porridge or a consistent dough you can shape (don’t worry every time I get something different!)
- Put it in the oven for about one hour and enjoy it!
- You can prepare it salty or sweet. You can give it a plain almond flavor or add other spices such us oregano or cinnamon!
- Raisins or dates can upgrade your sweet version ;-)

How often do we dream with whatever we want to happen but the closer we are the more scared we get and the harder it seems to reach it? Why don’t we dare? Where does the resistance come from? What are we afraid of? Don’t we deserve it?
Although I am doing very good with many things in my life, I still feel some resistance. I know it is the general feeling for many people, some things are moving and shaking, but in other areas nothing seems to happen…
This weekend I spend some time with someone who reminded me that everything is possible, that we just have to create our chances and get them! Thank you Maarten! That was a precious tip!
On the other hand tonight it is new moon, perfect moment to create new things in our lives… November has just started and is certainly going to bring many new things in my life. The year is about to end but still many things have to develop one way or another, so let’s help it a little bit!
Sunday eve I wrote my wish down and this week I am showing up more than ever… I am sure I will see amazing results very soon! :) Mliracles happen every day! I believe in it, I embrace them and I allow them to happen! Do you want the same in your life? Go out of your comfort zone and make it happen, it is much easier than we think!! We just have to be ready and take action :) I am… What about you? ;-)

I didn’t know that, but apparently November is the vegan month! the fact that you are reading thins doesn’t imply that you are a vegan (neither am I 100%) or that I want you to “convert”. However, have you ever given it a chance? Do you know what it all is about? Why do people become vegans? Is it healthy? Is it tasty? … Sooooo many questions…

There is no need to be strict on it, but what we would all turn our diets into a plant-based diet? What about being conscious about it and trying to “veganize” our diet once a week? In Belgium you can already find great initiatives like “veggie donderdag”. It means that in every restaurant on Thursday there is at least one vegetarian option, isn’t it cool? I think so… Many families try to follow it also at home :) Congrats!
